A very swedish thing is the "Knäckebröd" which you can find anywhere, with different grains, flavours. Anyway big selection in every supermarket, but nothing is better than your own homemade chia knäckebröd. I am not good at baking especially not in bread baking, so this is a very easy thing to avoid ruining a dough. Because it's impossible.
For this recipe you can take any size of cup, you do not need a scale. Because it is the relation of all ingredients that matters. Anyway below example makes approx 12 slices of bread.
Level: EASY
What you need:
KNÄCKEBRÖD
1dl Buckwheat
1dl Oats
1dl Chia Seeds
1dl Pumpkin Seeds
1dl Sunflower Seeds
1tsp (each) Oregano/Thyme or 2tsp "Herbes de Provence"
Salt
Salt
2dl Water
TOPPING (Optional)
Homemade Hummus
Mynth
Cocktail Tomates
Soybeans
Ruccola
Lemon Juice
Preheat your oven to 160°c and roll out baking paper. Blend your Oats and Buckwheat Seeds until they are a flour and add into a bowl. Add all other dry ingredients and flavours. Stir well and add water. Mix all together, first you will find it quite flouid, but let it rest for approx 5min and the chia seeds will soak the water.
When your paste is firm you can spread it evenly ca 5mm thick on the baking paper. Precut your slices already before putting it in the oven, because once baked it will break. Bake between 18-22min, depending on how crispy you like it.
You can also turn the pieces around and let them bake 2 additional minutes from the other side, since the bottom can be a bit moist some time. Serve with whatever topping you like, or with tomato-basil-garlic dip. TASTY!
