I just love, love - ADORE sweet potato. Literally every dish tastes better with this orange super veggie to me. Anyway if you are not a professional cook and want some easy nice dish with sweet potato, here it comes. By the way, i do seriously think sweet potato and avocado is the best combo, honestly if you find something better, let me know!

What you need:
1 big sweet potato
1 avocado (perfectly riped)
Olive Oil
Sesam
Flax Seeds
Daisys
Ruccola (for decoration)
Salt/Pepper
Fresh Lemon Juice
Wash your sweet potato before cutting, since the skin is eatable and quite healthy as well. So we will keep it on. Cut the sweet potato in approx 1cm thick slices. You can choose which way you would like, so if you prefer long slices, cut the other way.
Preheat your oven to 170°c.
Spread the toasts on a baking sheet and paint them all around with a thin layer of olive oil.
Bake in the oven for around 40min (yes it takes long)
Turn around and bake for another 10min or until the skin is getting crispy.
Meanwhile splash the avocado in a bowl with fresh lemon juice.
When your toasts are ready, spread your avocado, top with salt/pepper and sesame/flax seeds. To give it the ultimate final kick, add some daisys, which taste suprisingly good!
